flowers, cat, dinner

not all at the same time, though.

just wanted to share these teeny tiny blooms:




& one of my last pumpkins taking it's sweet-ass time ripening.

meet saffy:

she's SOOOO sweet. she doesn't like cuddling, but she loves being pet and purrs really loud.

we've had her for two years now i think. during her lifetime she has had 3 litters of kittens. crazy, i know. it was so much fun too. but we knew we were going to have to get her fixed eventually. luckily we found a place that would do it for a price we could afford. no more baby kitties :( but it's for the best.


oh right, i was suppose to share the recipe for the dinnah i had last night!
it's easy. very healthy and very filling. it will feed about 4 people. i have had leftovers twice today.


i don't know what to call this, lol.

oh well.

you will need:

1/2 a butternut squash, peeled and chopped into chunks
1 large sweet potato, peeled and chopped into chunks
2 cups cooked chickpeas (or 1 can, drained & rinsed)
1 cup brown rice (i use minute rice, if using rice that takes long to cook, start this first)
olive oil
1 clove of garlic, minced
2-3 large kale leaves, rinsed & chopped
salt & pepper
chili powder
cumin
paprika

preheat oven to 425 degrees F.

prep the squash and sweet potato and toss with olive oil, salt, pepper, and chili powder (i don't measure so however much you prefer). spread out onto a large baking sheet and bake for about 10 minutes. remove from oven and stir.

toss chickpeas in olive oil, salt and pepper, chili powder, cumin, and paprika (i do this in a bowl). make room on the baking sheet and spread these out as well. bake for 15 minutes more or until squash and potato are completely tender.

meanwhile cook the rice according to package instructions. i use minute rice so it only takes about 10 minutes to cook and it's done.

in a large shallow saute pan, heat olive oil and cook garlic about 2 minutes. add the kale and saute until just wilted. remove from heat.

spoon a little bit of everything onto a plate for yourself. i like to eat the rice with a bit of earth balance, and sprinkle on some sea salt and vegan parmy cheeze.

  1. I love how dinner looks with everything seperate instead mixed up. Very pretty and appetizing!
    Oh and I'm totally jealous of your pumpkin. I so wish I had pumpkins on the vine...maybe next year

  2. thanks, sometimes i like everything separate. but eventually it gets mixed :) we got about 10 pumpkins this year. they are so easy to grow, i love it!

  5. yup! we just throw the rotting pumpkins next to the patio and they take off without any help from us. it's so cool :D

    That's great that you got your kitty spayed. It's really important that we all do that with all of our pets *as soon* as it is possible. Over 3 million perfectly healthy cats and dogs in US shelters are put to their death, every year, just because no one has adopted them. It's the heartbreaking truth. I want to let you know for future reference that there are low-cost resources for spaying and neutering your pets.
