easy rice

like i mentioned yesterday, hannah's birthday was on sunday.

she was a very happy 4-year-old.

very happy.
she got lots of new toys and my mom bought her a whole bunch of clothes. very cool.

dinner tonight was rice with veggies and beans. this is one of my favorite things to make because not only does it taste awesome, but it's easy. and i love easy meals. who doesn't? i make it probably every other week. during the summer i made it every week due to zucchini coming out of my ears.

recipe?

easy tasty rice (creative name, huh?)

1 cup dry brown rice
olive oil
1 small onion, chopped
1 medium clove garlic, minced
1/2 large zucchini, chopped
2 cups cooked black beans
1 can organic corn, or 1.5 cups frozen
cumin
chili powder
paprika
salt & pepper

cook rice according to package directions.
heat oil in large saute pan and cook onion, garlic, and zucchini until tender. add the black beans and corn and cook through. finally add the rice and spices (i don't measure these so however much you prefer of each). leave on the heat for 2 minutes to slightly crisp the rice, stirring a few times so it doesn't burn. remove from heat.

eat it as is or serve it on tortillas with some kind of cheeze and taco sauce.

  2. Happy belated birthday to Hannah!
    I make a lot of beans and rice. Tasty, cheap, and you can switch around the spices to mix it up. Can't beat that!
